Season roast and place in roasting pan. Cook at 375 degrees for 1/2 hour. Turn down to 350 degrees and follow the method for your size:
3-4 lb. - 1 hour
5-6 lb. - 1 1/2 hours
The internal temperature should be 125 to 130 degrees.
