Frequently Asked Questions
How much stewing beef do I need?
About a third to half a pound per person for a stew with vegetables. Two pounds feeds four to six with leftovers. It comes in 1 lb packages.
How is it packaged?
Cut and packed in 1 lb packages at the counter. If you need a different amount, call the shop and we'll pack it to suit.
Why does my stewing beef come out tough?
Almost always because it has not cooked long enough. Blade needs at least two hours at a low simmer for the connective tissue to break down. It goes tough first, then tender. If it is chewy at ninety minutes, keep going.
