Frequently Asked Questions
What does kidney taste like in a pie?
Stronger than the steak beside it, with an iron edge closer to liver than to muscle meat. In a pie it is cut with the beef and the gravy rather than eaten on its own, which is why steak and kidney works where kidney alone would be a harder sell.
How is it packaged?
Made in house and packed at the counter. Pack sizes are listed above, and we can pack a different amount if you call the shop.
Why are steak and kidney served together?
Thrift first, then taste. Kidney was cheap and plentiful where steak was not, so pairing them stretched the expensive part. Cooks kept doing it after the economics changed because the kidney gives the gravy a depth that steak alone will not.
