Season turkey with salt, pepper, fresh herbs (rosemary, sage, thyme) or poultry seasoning and place in roasting pan and cover with foil. Cook at 375 degrees for 1/2 hour. Turn down to 350 degrees and follow the method for your size:
10-12 lb. - 2 to 2 1/2 hours
14-16 lb. - 2 1/2 to 3 hours
16-18 lb. - 3 to 3 1/2 hours
Uncover turkey and cook for another 1/2 hour.
