Frequently Asked Questions
How many short ribs do I need?
Pieces are about a pound each, and the bone is a fair share of that. Plan on one to two pieces per person depending on how much else is on the plate.
Can I get a custom thickness or weight?
Yes. Add a note at checkout or call the shop, and we'll cut it the way you want it.
What is the difference between English cut and flanken cut?
English cut runs along the bone, so you get one thick rib per piece, which is what a braise wants. Flanken is cut across several bones into thin strips, which is the Korean style for the grill. Ours are English cut.
