Frequently Asked Questions
What size brisket should I buy?
Brisket loses a lot of weight over a long cook, so plan on about a pound raw per person. A 4 to 6 lb brisket serves four to six, and a 10 to 12 lb serves ten to twelve. Four size bands are available.
Can I get a custom thickness or weight?
Yes. Add a note at checkout or call the shop, and we'll cut it the way you want it.
What is the difference between a whole packer brisket and a flat?
A whole packer is both muscles together, the point and the flat, and runs heavy. The flat on its own is leaner and slices evenly, which is why it turns up more often at a counter. Ours run from 4 lbs up to 12 lbs, so the larger bands are close to a whole packer. Call the shop if you want the point and flat separated.
