You are being charged for the higher weight. Please indicate in the notes section, the weight you would prefer.
Season turkey with salt, pepper, fresh herbs (rosemary, sage, thyme) or poultry seasoning and place in roasting pan with cut up vegetables and 1 cup of chicken stock. Cover with foil. Cook at 375 degrees for 1/2 hour. Turn down to 350 degrees and follow the method for your size:
5-7 lb. - 1 to 1 1/2 hours
7-8 lb. - 2 hours
Uncover turkey roll and cook for another 15-20 minutes.
The internal temperature should be 165 degrees.
